Grilled Sting Ray -
BBQ Stingray or Skate Wings – A popular method of cooking stingray or skate wings is by barbequing. The wings are marinated in spices and curry sauce then grilled to perfection. A spicy sambal sauce with fresh shallots is served with it. (Bangkok Sauce)
Ikan Bakar (Grilled) -
A popular local fish for grilling is Ikan Kembong (chubb mackerel, also called Indian mackerel). Other Whole local fish can be used. Fish is marinated in spices, coconut milk, and sometimes stuffed with sambal, then wrapped in fresh banana leaves and grilled over hot charcoal (BBQ local style) to prefection, served with Bangkok sauce or sambal sauce.
Otak Otak -
Otak-otak is a fish cake from the south of Malaysia. A thi slie of fish is wrapped using banana leaf or coconut leaf and grilled over charcoal fire. As a result, it ends up reddish-orange, dry and with a distinct smoky fish aroma.
